Little Black Bomber & Glamorgan Sausage


A lovely combination of sausage and cheese for that simple snack or evening meal.


Ingredients

  • 50g Little Black Bomber extra mature cheddar 1 cm cubes
  • 50g apple batons
  • Glamorgan Sausage
  • 250g Little Black Bomber extra mature cheddar cheese, grated
  • 200g fresh white breadcrumbs no crusts
  • 5tbsp finely chopped spring onions
  • 4 egg yolks
  • 2 heaped tbsp finely chopped parsley
  • 1 tsp fresh thyme leaves
  • 2 tsp English mustard powder
  • salt and freshly ground black pepper
  • plain flour, to coat
  • fine dry breadcrumbs
  • oil for deep frying

Instructions

  • Mix together the cheese, fresh breadcrumbs, spring onions, egg yolks, parsley, thyme, mustard, salt and pepper, move the paste until a coarse texture is obtained.
  • Shape into sausages the size of a little finger. Dip the sausages first in flour to coat lightly and then in the lightly beaten egg whites. Roll in the dry breadcrumbs. Refrigerate for 30 minutes.
  • Deep fry the sausages in light oil 155 degrees until golden brown all over. Drain on kitchen paper and serve at once.
