Little Black Bomber & Glamorgan Sausage
A lovely combination of sausage and cheese for that simple snack
or evening meal.
Ingredients

50g Little Black Bomber extra mature cheddar 1 cm cubes

50g apple batons

Glamorgan Sausage
-
250g Little Black Bomber extra mature cheddar cheese, grated

200g fresh white breadcrumbs no crusts
-
5tbsp finely chopped spring onions
-
4 egg yolks
-
2 heaped tbsp finely chopped parsley
-
1 tsp fresh thyme leaves
-
2 tsp English mustard powder
-
salt and freshly ground black pepper
-
plain flour, to coat
-
fine dry breadcrumbs

oil for deep frying
Instructions

Mix together the cheese, fresh breadcrumbs, spring onions, egg yolks, parsley, thyme, mustard, salt and pepper, move the paste until a coarse texture is obtained.

Shape into sausages the size of a little finger. Dip the sausages first in flour to coat lightly and then in the lightly beaten egg whites. Roll in the dry breadcrumbs. Refrigerate for 30 minutes.

Deep fry the sausages in light oil 155 degrees until golden brown all over. Drain on kitchen paper and serve at once.
